Instructions

  • In a food processor, pulse almond flour, baking soda, and salt

  • Pulse in eggs, oil, lemon zest, and stevia for 20 seconds

  • Stir in raspberries by hand

  • Divide batter between 8 paper lined muffin cups

  • Bake at 350°F for 30 minutes

  • Cool 30 minutes

  • Serve

Are Almond Flour and Coconut Flour Keto?

The most frequent keto baking question I’m asked is, can I use coconut flour in place of almond flour and vice versa. Unfortunately, the answer is no, that won’t work.

      Asia, thanks for your comment! To store, let the muffins cool on the counter overnight, then wrap in a paper towel and place in a ziploc bag. Per stevia, I love the brand that I link to in this recipe :-)
